Today i had a gap between papers...
and i woke up late..
and my sister had raved about healthy eating...
so a cumulation of all the above factors led me to try out a new recipe :)
thus, i went over to trymasak(link on left pane :P) to see if i could find a new recipe.
and then i met a recipe for nasi lemak, which was relatively decent but was too fattening for my sisters needs.
This led me to search for something that was flavorful and yet less fattening.
Although this ended with a recipe that wasn't really slimming, it was more interesting. As trymasak didnt have this recipe in their lists..
So being highly interested in cheese and potatoes i tried my best to find a recipe that would combine both.
A flashback came to mind and i started thinking of a dish that was served to me in a fancy diner awhile ago..it was called "potato jackets"



A brief run through the google search engine returned tons of recipes and videos, most of which were astonishingly simple.
but they didn't have a basic recipe.. and their ideas on how to bake the potato, well there are more ideas than directions on a compass..

Thus, after going through a few videos. An idea of combining them to form a base where all my jacket potatoes are gonna come from began. Below is the recipe :)

Jacket Potato (Basic)
Ingredients : (this recipe serves 2-3 but if u wanna add more just pile on the spuds :) )


4 Potatoes!! :) get them about the size of a palm, so that they fill more stuffing :)
3 sausages, or any other kind of meat u can find (my next trial would be with minced pork :p)
1 tablespoon of butter
2 tablespoons of olive oil(really just drench your palms in some)
1 onion
1 tomato
some salt and pepper
some cheese :)

Utensils:
an oven preheated to 200 degrees
a really sharp knife (tomatoes can be the devil to dice)
forks and spoons

Method:
  1. WASH THE SPUDS!!! you'll be eating them with their skins on, so having mud and stuff aint gonna be good.
  2. Drench you palms with olive oil and roll the potatoes in your palms to coat it with olive oil.
  3. Sprinkle some salt and pepper onto the coated potatoes and put them into the oven at 200 degrees for about an hour.
  4. While the potatoes bake, dice up the onions tomatoes and sausages(or any form of meat)
  5. Sautee the meats and add your sauces for flavor.
  6. Once the potatoes are done, take them out and cut them in half (lengthwise if possible, can be hard to tell with a potato)
  7. Dig out some potato flesh in the middle to form a bowl like shape in each half of the potato.
  8. Mix the flesh with some butter, cheese, the meats, onions and tomatoes.
  9. Put the mixture back into the 'bowl'tatoes. And top them with a layer of cheese.
  10. Send the 'repacked' potatoes into the oven at 200 degrees, to be baked for another 15 minutes
  11. Cool and serve :) (serves best as finger food with thousand island sauce or your favourite dressing)
Now that that was done, i realised that dinner was not going to be filling enough. And there were tons of the aforementioned mixture left over. Thus, in a spur of randomness i decided to sautee the remnants and see what i got.

The result is what i called 'Potlickers' cos they stuck to the bottom of the frying pan but were very tasty!! :)

Potlickers =P

Ingredients: (best if used from the above remnants)
Mashed potato
Sausages(or any meats,best if flavored)
onions
tomatoes
Eggs
Salt & Peppa
Cinnamon
Worcester sauce

Method:
  1. Heat up a frying pan with olive oil
  2. Stir fry the mixture in the oiled frying pan
  3. Crack an egg over the mixture while frying
  4. Add a dash of cinnamon, Worcester sauce, salt and pepper.
  5. Serve while hot :)
The potlickers i made were an epic success, after eating them my sister couldn't wait for the main course to be served :)
Well typing this out at 4 am definitely has some devastating effects..
so i'm gonna go off now.. while u guys try this out :)
