MedicOnTheRun
So i had me a wonderfully eventful life up till now...
and i expect it to be as industrious and eventful as ever for a long time to come :)

Feeling awkward about the entirety of it, I spent a few hours thinking what to do for the people that make my life so special that i would celebrate it...
So, i decided to try out something. Something i know i'd love to eat :P
I took out the recipe for the baked potatoes, thinking that i'd mash the insides to make potato mash and fry some fish for a Fish & Mash.

However as things would turn out, I was out of my favourite Teriyaki Sauce and lemons to squeeze juice from.
Now the only problem with that was, dinner is expected to be served at 7pm and not a minute less.
So I took a look at my availible options.
  1. Eat out, which i'll be doing tomoro
  2. Order something, which might happen tomoro
  3. Cook something else, which needed another hour or so of defrosting
  4. Work with what i have.
Wow, life does give us alotta choices....
So I took up the challenge and went with option 4, working with what i had.

Recipe: Fishin Tater Boat Crew

Ingredients:
Potatoes (this determines number of servings)
Dory Fish (cut and diced Sashimi style)
Onions
Tomatoes
Grated Cheese
Olive Oil
Salt
Pepper
Worchester Sauce
Italian dressing

Special Utensils:
Torch(to melt cheese)
Oven
Flat based pan ( you can use a wok flat based pan is just personal preference here..)

So this time I ain't gonna type out a specific list of steps, as there were many problems that i encountered while cooking today.

First up i set up the potatoes to be baked. Washed the skins as i wanted to keep them on, before popping them into the oven, i drizzled olive oil and shook some salt and pepper on them, making sure they were completely covered.
Then after popping the spuds in for 50 mins on 200 degrees, I started slicing the frozen fish. Frozen is easier to cut, but u need it to thaw a little so that they dun stick back together.
Oiled the pan with Olive oil and let the pan heat up, chopping the onions as i did so.
First into the pan went the freshly chopped onions, stir frying them till fragrant and slightly pale coloured.
Next(please remember to reduce the flame/temperature before doing this) is to put in the fish, place them in slowly as the change in temperature will sear the flesh.
Toss them while u fry, to remove the crumbly texture of the fish(the cuts are quite important here. make sure that the grain of the muscle is severed so that if the meat were to separate it wouldn't just fall apart.) and add in salt, pepper, and Worcester sauce. Fry them till sightly browned.

Once that is done the next job is to cut the Tomatoes. dice them into small cubes so that they go easy on the mouth. If you prefer, remove the juicy innards to avoid sogging up the boats (only luxury cruises like having water inside lolz...).
When the potatoes are done, bowl out some of the potato and mix it with the fish and tomatoes and some grated cheese(mozarella or cheddar). Then scoop up parts of the mixture and put them into the carved 'boats'.

Top the boats with cheese and flame the cheese with a torch to melt it.

PLEASE SERVE WHILE HOT :p this dish is best eaten when fresh out of the kitchen.
I made a mess out of the kitchen and had the whole family finally together without arguments for once at the dining table. The evening saw everyone enjoying themselves and me completing my EDH deck.

Oh about the food... the boats were finished before they were able to cool off :P (and noone figured out that it was fish in the boats BWAHAHAHAHAHAHAHAHHAA) Happy birthday all SCORPIOS :)
